Broccoli Chicken Breakfast Casserole

This recipe was a hit the first time through even though it was overdone (the recipe below is adapted for correct cooking time).  This dish should last two people a full week.  We made ours Sunday night and heat up a slice quick each morning.

-Ingredients-

10-12 eggs, depending on size

12 oz. package of broccoli florets (we got ours at Trader Joe’s) or equivalent

2-4 sliced chicken sausages or diced/pulled chicken breast (we used Trader Joe’s jalapeno chicken sausage)

2/3 cup sliced almonds

1 cup cottage cheese

pepper

-Directions-

Preheat oven to 350

Beat eggs together and stir in fresh ground pepper

Mix in all remaining ingredients

Pour into baking dish rubbed with olive oil to prevent sticking

Top with some more black pepper.

Let that baby ride for 45-55 minutes in the oven and let cool.

I mistook bubbling cottage cheese in the mix for raw egg.  This caused me to leave in the casserole for longer than expected.  Still tastes pretty good, but I can’t help but wonder, what if?  Looks like we’ll be making this one again soon.  Don’t make the same mistake as me.
